New recipes for 2011 - September
Our Sunday school class, now at least ten couples strong, enjoys breakfast each week. So I am constantly on the lookout for new portable/feeds a lot/inexpensive/easy-ish breakfast/brunch-type recipes.
Saw this, had good ratings, thought I'd try it. So I did.
Apple Cinnamon Danish Squares
Cake
2 c baking mix (like Bisquick)
1/4 c sugar
2 Tbsp margarine, melted
1/2 c almond milk
1 tsp vanilla
2 eggs
1 can apple pie filling
cinnamon/sugar mix to taste
Glaze
1 c powdered sugar
1 to 2 Tbsp apple juice
Preheat oven to 350°. Grease square baking pan. Combine all cake ingredients except pie filling and cinnamon/sugar mix; stir until completely moistened.
Spread two-thirds of the batter in pan. Spread pie filling over batter (you might not use the entire can). Sprinkle with cinnamon/sugar mixture. Use cookie scoop to drop remainder of batter randomly on top of filling.
Bake 20-25 minutes or until golden brown.
In small bowl, mix glaze ingredients. Drizzle over danish. Cut into squares.
Verdict:
Tasted good, but gooey.
Notes:
My opinion on the gooiness goes as follows. I had read a few reviews saying that this tasted better cool, more like a danish. Also, I experience extreme frustration with pouring glaze on warm things, as it melts into this sugary puddle on top of whatever.
So I made this Saturday night, and waited until Sunday morning to apply the glaze.
Yeah, the glaze melted anyway. And where the filling met the breading, it was gooey. So if there is a next time, it shall be served warm. But who knows what I'd do about the glaze.
Also, it may have been better if I had used cow's milk. A nursing mommy in our class has found out her baby is allergic to milk, so she's on a milk-free diet. Our family knows how hard it is to deal with food allergies, so I really wanted to take something that she could have. I replaced the milk in the cake mix with almond milk, and the milk in the glaze with apple juice.
And if you're wondering about the cinnamon/sugar mix, this is a ratio of 2 Tbsp sugar to 1 tsp cinnamon. I keep a container of this around, for use in multiple places.
