An almost no-cook week

The only thing I have cooked this week is a pan of roasted potatoes. Don't get me wrong, I love to cook. Maybe a little less in the summer, with it being so hot and being tired from work, garden, and Trey. But every once in a while it's nice to have a break.

This past weekend, a dear friend came over an brought us dinner - completely without reason and totally unexpected. As God's grace would have it, He has seen fit to surround us with friends who are fabulous cooks. Anyway, the surprise meal just made my day. Especially since there was macaroni and cheese involved. Don't get much of that anymore because of Trey's allergy.

So here's what we had/are having this week:

Saturday - friend meal: beef roast, mac & cheese (cucumbers for Trey), green beans

Sunday - leftovers from taco roll-up last week (hot dog and sliced tomatoes for Trey)

Monday - dinner at Brandon's folks' house

Tuesday - grilled pork chops & chicken, roasted potatoes, sliced tomatoes (Brandon grilled, I cooked the potatoes)

Wednesday - leftovers from friend meal

Thursday - leftovers from pork chop/chicken meal

Friday - grilled hot dogs, grilled corn on the cob (Brandon grill)

Nice. Oh, I have to tell you about the grilled chicken. The best way I had found to have grilled chicken before Trey started on solid foods was to marinate it in italian salad dressing. Yum. But we can't do that now, as italian salad dressing contains cheese, and Trey can't have that.

Now we don't marinate the chicken breasts. While they are grilling, Brandon will sporadically douse them with Sprite and sprinkle a good amount of Lawry's season salt on them. We came across this quite by accident, but oh my. Dee-lish. Try it sometime.

By the way, Brandon loves Lawry's season salt. So much that every year my parents give him a jumbo jar for Christmas. He puts it on everything. Everything.

Anyhoo, that's it for now. I will eventually take pictures of Trey to post. Oh, and we're nearing the time when I can give a final report on the garden. I can say with confidence that we have never had such a bounteous year. We are amazed. Praise the Lord.

I have to wonder about the first time the chicken was doused with Sprite....was this a spill, and then a try to recover with some seasoning salt??

I love no-cook nights!! Way to go on a whole week of em'!

Not really like that - Brandon likes to pour stuff on meat when it's grilling to keep it from drying out. We had a little leftover Sprite from a cookout, so I said, "Here, try this." And it was great!

My Dad always uses Lawry's seasoned salt on everything too. :)
