The great chicken and dumplings furor
It all started when my sweet Mama had surgery a few weeks ago. I'm all like, "I want to help take care of you." And in her usual strong and fiercely independent manner, she's all like, "You've got enough to do." Not long after which, I learned that she had already stocked her fridge with homemade goodness before the operation even happened.
Visiting a few days after the surgery and trying to lend a hand wherever possible, I said, "Well, I had planned to cook some for you all, but it looks like you've already got plenty." To which Dad replies, "Just because we have food doesn't mean you don't need to bring anything."
Point taken. So on the Tuesday morning before school started, I whipped up a batch of chicken and dumplings. The boys and I headed over to check on Mom. I walked in the door, firmly declared that I had brought chicken and dumplings, and shoved them in the fridge, steeling myself to be chided for it. Of course she didn't chide me, and it was great to spend time together. Before we left, I asked if she wanted me to get her some lunch, and she said she wasn't hungry.
Not long after we got home, I get a text just raving about those chicken and dumplings. Raving. I felt so fulfilled and equally excited for the reaction from Dad, whenever he got home from work, since it was his own Mama who taught me to make them. The only thing I changed was to get a rotisserie chicken instead of boiling it from raw. Figured the throwback taste would bring him some joy.
The next day, another text from Mom saying she couldn't wait to polish off the rest of the chicken and dumplings. Hmm. Gray area. I suppose since Mom was the one convalescing, she surely was entitled to all of the chicken and dumplings. But, oh poor Dad!
I would later learn that apparently Dad caught her with the container, found out what it was, and was at least given a taste.
Fast forward a couple of days, to when I told this story to Brandon's folks. They chuckle, of course, and then Melvin says, "Boy, it sure has been a long time since I've had chicken and dumplings."
Two days later, another batch came his way.
In case you've caught the fever:
Meemaw Margaret's Chicken and Dumplings
1/2 rotisserie chicken, shredded or chopped
1 can Grands biscuits
1 carton chicken broth
1 cup water
pepper to taste
1/2 can peas, drained (optional)
Bring broth and water to boil in large or wide pan. Meanwhile, cut each biscuit into sixths. Drop dough pieces into boiling broth, add pepper to taste, and stir with wooden spoon. (Must use a wooden spoon. Dough sticks to all other materials and destroys the dumpling shape.)
Boil 10 minutes, stirring occasionally. Remove from heat. Stir in chicken and peas, if desired. Heat through and serve.
Close your eyes as you take the first bite. This will probably happen involuntarily.
