New recipes for 2011 - August

For one of April's new recipes, I made this Mexican all-purpose stuffing, dubbed "Taco Stuff", and in doing so found out that the main ingredient in yellow-envelope taco seasoning is whey. Then proceeded to lament that poor Trey may never eat Mexican food.

Both of Two of my faithful readers (and dear friends) advised me on homemade taco seasoning. No whey. Way!

I took what they gave me and ran with it, standing over the counter with a zillion spice bottles.

Sniff. Measure. Stir. Sniff. Shake. Stir. Sniff. Repeat.

And landed on this.

Pointless Homemade Taco Seasoning

1 Tbsp chili powder
1 1/4 tsp cumin
1/2 tsp garlic powder
2/3 tsp paprika
1/4 tsp onion powder
1/4 tsp oregano
1/8 tsp red pepper flakes (cayenne would be better - didn't have any)
3/4 tsp salt
3/4 tsp pepper

Stir together. Brown and drain 1 1/2 lb meat, then stir in this mixture and just less than 1 cup water. Simmer a few minutes. Serve however.

Verdict:
Good. Don't eat much Mexican food myself, so I'm not the best judge, but our soft tacos were yummy.

Aden's not the best to judge by either, because he eats everything, but he had a whole taco spread out on his high chair and sought out the meat first. Not a bad sign.

Notes:
Wondering about the 'pointless'? Yeah, for the 96th day in a row, Trey refused to eat dinner. I'm going to lose my mind.

And yes, I am a weenie for only putting a dash or two of the pepper flakes. Brandon would have had me to dump the whole bottle in there. Weenie perhaps. But my tongue is still intact.
